Let's just say the food here is so good. That is an understatement really. Catalina is our cook. She cooks us traditional Ecuadorean food everyday for lunch and it is suuuupppeerr yum. There is always rice but we usually have some kind of veggie, a soup, and some kind of meat. This lovely woman cooks for us everyday but we never really get the chance to spend time with her because we are always in a rush + our Spanish is .... Not so good ( we speak kid Spanish.. Not adult Spanish). Soooo when it came time for Nicole and I to plan our activity for this week, we decided we wanted to learn to make some of our favorite foods from the one and only Catalina + we wanted to get to know her. We told her all the things we wanted to learn and then we went shopping for her. We started the night with making this rico banana cake and then made these broccoli ball things... We had other things planned but eventually we got talking to her and so deep in conversation that we didn't have time! Her life is really incredible. We learned all about her past/ conversion to the gospel and eventually the night ended in all of us in tears hugging our sweet cook Catalina. We concluded the evening eating good food and enjoying the best of company.
